Finally I started my Hertog Jan Grand Prestige project.
Grand Prestige is one of Hollands most heavy beers. A few years ago I visited the brewary and there they give you a small drink of Grand Prestige that has been kept in a cool dark place for several years.
When its that old this beer devellops a very special port-like taste. Since you cannot buy it of that age anywhere the only option is to keep it yourself, and thats what Im doing.
The brewery says that after 5 years the tastes is on its best. My plan is to put a few bottles away, and every year on my birthday I take a bottle out and put a new one back.
In our house the best dark and cool place is under the floor where a small space is for plumming and where we have a lot of isolation. From a collegue (Thanks Bas !) I got a watertight barrel once used to store suggar supplies to make sure the corks dont get fungi.
and then I placed the whole under the floor … now all I have to do is wait a years to check one bottle and then another one after 3 years… then in five years time they should be PERFECT
